I love bananas. I really, really love bananas that are nearly brown, on the verge of spoilage, and are most often eaten just after a “triple dog dare” or just before winning a $5 bet. This may disgust most people, but I find the sweetness of a rotting banana homey. I just love it.
Lucky for me, these bananas are the best fit for baked goods and here, this one-ingredient ice cream. Simple and sweet, this ice cream is an amazing alternative to rich and heavy desserts, offering a fast and potentially healthy way to curb your sweet tooth.
Chop up your bananas at whatever ripeness floats your boat. Freeze in zip-tight storage bags until you are ready to use. Then, simply pull the bananas out and place in a food processor or blender.
That’s it–just blend and, voilá. You can add any ingredients you like to the mix, but I recommend adding chunky things like nuts, chocolate or carob chips, coconut flakes, etc. on top versus into the “ice cream” as it will lose its consistency. Spices and seasonings like cinnamon, nutmeg, lemon zest, or anything else can be added straight to the banana prior to blending.
My current favorite? Banana and cinnamon with honey drizzled on top and a few walnuts…mmmm.
